Mincemeat Surprise Cookies

Makes about 60

Ingredients

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) softened butter or margarine
3/4 cup granulated white sugar
3/4 cup packed dark brown sugar
1 teaspoon vanilla extract
2 large eggs
1 (9-ounce) package Nonesuch Condensed Mincemeat

Method

Preheat oven to 375 F.
Combine flour, baking soda & salt in a small bowl. Beat butter, sugar & vanilla in a large bowl. Add eggs, beating well. Gradually blend in flour mixture.
Crumble mincemeat and stir into dough.
Drop by rounded teaspoon onto ungreased cookie sheet.
Bake 9 to 11 minutes until golden brown
